 It’s How Good You Want To Be: A Fig Bulgur Salad

There are moments in life you wake up in the morning with a feeling of unease, not even knowing what’s wrong. It’s normal, don’t worry! The best message is that there are moments everything seems to be in order - subjectivly- and you’ll forget the bad days you maybe experienced before.

Before moving to Brussels I was a little worried about my year abroad, about what the future will bring, which people will cross my way. I was sad to leave behind family, friends and my reliable environment in Germany. Even though I went to Chili alone for a highschool year at the age of 16 - it doesn’t matter how fare away you go - it will always be a brave step to quit my comfort zone. But I really love to do it! I can’t say it often enough:

These moments of changement are absolutely the best ones of my personal history. Once I step out of routine I discover new ways to think, to solve problems, to see my life, me, my environment. It’s like connecting pieces of puzzle to a whole big picture and suddenly you see things you haven’t before. Different cultures enrich our knowledge, also give us a reality check of what we should value at home and let you get to know amazing people. I met many of my best friends by travelling and living experiences abroad. 

Why do I am telling you this? Well, I just wanted to share my joy of today - not only because it’s “Happy Monday” but also because I want to remember this moment of insight and because I want to encourage to live experiences, to have the guts to change something in life. I love to buy books, non-fiction books as adviser and creative mind, because it helps me to change something I want to improve in a way I haven’t tried before. Actually a friend of mine here in Brussels shares the same “affection” for life-changing books so it’s very enriching to exchange ideas and hints. And finally, while dealing with self-developement and future planning I discover interesting business concepts, assembly new ideas with my educational background to new career opportunities. Have a try to do a step towards wisdom and self-fulfillment! It’s not easy but   in all means worthwhile. 

And after having done hard work you should calm down, do yourself a favour (because cooking is really a pleasure!):

Recipe: 

  • 200 g bulgur (buckwheat-bulgur here)
  • a handful of cooked chestnuts
  • 200 g fresh goat cheese (maybe with herbs)
  • 2 handful of mâche salad
  • a handful dried figs
  • 1 avocado
  • (parma ham)
Dressing
  • 3 tbsp nut oil
  • 1 EL lemon juice
  • 1 tsp dijon mustard
  • salt
  • pepper
  1. Top the bulgur with water (only thumb high) and cook for about 10 Min.
  2. Wash salad, chop the rest of the ingredients and prepare the dressing.
  3. Mix everything and top with parma ham to serve.
